As mentioned in one of my past posts, baked oatmeal is one of my top picks for breakfast, not only is it heart warming and comforting on chilly autumn mornings, but the combination of taste and textures resembles a cake! My favorite cakes are undoubtedly banana cake- which I have already recreated, and carrot cake. So here it is!
Carrot Cake Baked Oatmeal
1/2c. almond milk
1tbsp. vanilla essence
1/2tsp. baking powder
1/4tsp. baking soda
1. Preheat oven to 180C
2. Blend together the carrot, oats and almond milk.
3. Stir in the vanilla and spices- according to personal taste preference.
4. Finally add the baking powder and soda
5. Place in the oven for 20-25minutes, until the top is golden brown and slightly firm.
