I can’t believe it’s been over a week since I graduated, apart from sitting in bed and watching tv series all day, I’ve been experimenting with recipes.
And this is another one of them- Bliss balls are a great snack, they only require a handful of ingredients and are so easy to prepare. The coconut brings a beautiful sweet aroma, and the subtle hint of vanilla just tops it off perfectly!
Vanilla Coconut Bliss Balls
Makes 15-20 Small
15 large medjool dates
1tsp. vanilla extract
Rolling Ideas: goji berries, coconut, sesame seeds, cacao powder and nibs
1. Pulverize oats, almonds and coconut in a food processor.
2. Add dates and vanilla, mix till a sticky paste forms.
3. Form into small bite sized balls and roll in desired flavors.
4. Place in fridge to set for 20-30mins.
