I’ve only been back from Fiji for less than a week and I’m already missing those tropical tastes… So this morning I decided to make use of my newly acquired coconut opening skills and put together this heavenly ‘Milkshake’.
Coconut Banana Milkshake
For the frozen bananas, you will need to cut up ripe bananas and store the slices in the freezer overnight or for at least 4hours prior.
6-7 frozen bananas
1-2tbsp. coconut flakes (or dessicated)
500g young coconut flesh
300ml coconut milk
approx. 300ml water
1. Place all ingredients into the blender, pouring in the water last (adjusting to preferred thickness of the milkshake)
2. Blend until smooth, and pour out to serve.
