Creamy Sweet Potato Oatmeal

If it’s one food our family always has in stock it’s definitely sweet potatoes (also known as kumara) We always have at least a dozen in the oven, ready to grab and eat on the go.

I’m not sure why I never thought of incorporating sweet potatoes into my oatmeal before, so it is about time!


Creamy Sweet Potato Oatmeal
1 Serving

1/2c. oats
2 medium small sweet potatoes (baked and mashed)
1/3c. water
1/4c. almond milk
1tsp. vanilla extract

1. Bring water to boil in saucepan, add oats, on low heat (This contributes to achieving a creamy smooth consistency)
2. Mash up one of the sweet potatoes and once some of the water has been absorbed, add it to the saucepan. Stir consistently.
3. Allow to cook for 2-3minutes, then add the next mashed sweet potato, along with half the almond milk. Continue stirring.
4. Once oats begin to thicken, add remaining milk and vanilla essence, stir. Cook until preferred consistency and turn off the heat.
