Zoodles with Creamy Mango Avocado Sauce (RAW)

I have been obsessed with zoodles with the longest time, for those who are unfamiliar with the term- ‘zoodles’ are zucchinis/ cucumbers (or carrots) which have been spiralized into the shape of noodles
Zucchini + Noodles = Zoodles!

Unfortunately I never had the equipment to make zoodles, until I was gifted with a julienne slicer from my cousin for Christmas! (Big thank you sis) I made this recipe for lunch, which was the perfect cool down from sunbathing outside. I was inspired from here. I love the subtle boost of flavour and creaminess the avocado gives, it compliments very well with the sweetness of the mangos, and the spices add the finishing touch! This recipe is fully raw vegan, a summer meal or snack which only requires a handful of basic ingredients and it can be whipped up in just a couple of minutes.


Zoodles with Creamy Mango Avocado Sauce 
1 Large Serving (Two Small)

Basic Zoodles:
2 Large cucumbers
1 Medium carrot (peeled)

Creamy Mangavo Sauce:
1 Avocado
2 Mangos
Juice of 1/2- 1 lime
Pinch of cayenne pepper, ground ginger and chilli flakes (to taste)
1+ 1/2tsp. Organic Coconut Sugar

1. Using a spiralizer (or julienne peeler) create “noodles” with the cucumber and carrot, its entirely your choice whether you want to leave the skin on the cucumber- I did for the extra nutrition. Transfer into a large bowl and roughly mix them together.

2. Cut the avocado in half and remove the seed, slice and add to the blender along with the flesh of two mangos, blend until a smooth consistency is achieved, if the mixture is too runny consider adding more avocado to increase the creaminess.

3. Add the coconut sugar and spices according to your own preference, don’t be too careless with this step, seasoning your sauce can make or break this recipe! Remember you can always add more flavour if it’s too bland, so take your time testing and tasting.

4. Once you are done with the sauce, simply pour it over the prepared zoodles (it’s likely you will have extra sauce, you can use it as a dip, save it for later, or just eat it straight- which is what I did of course.) Carefully mix the zoodles until the sauce is evenly distributed throughout the dish.

5. Serve Immediately!
