Vanilla Coconut Soft Serve with Choc Drizzle

Hi there everyone, sorry I haven’t been posting many recipes lately, I’ve been quite busy preparing for my first year a university! (Or college for those of you in the U.S.) As I mentioned a few days ago on Instagram, I will be going to The University of Melbourne to study Biomedicine. I’m super excited to finally study what I’m passionate about, in a beautiful city (which luckily isn’t too far from home). Based on recommendations from you all, I have now accumulated a long list of vegan cafés and restaurants to check out. Also if any of you are going to Melbourne as well, or already living there, please let me know! It would be amazing to meet some of you in person (:

<strongVanilla Coconut Soft Serve with Choc Drizzle
1 Serving

Soft Serve:
4 large frozen bananas
1tbsp. organic vanilla (I used extract, paste or powder will work as well, though you may have to adjust the amount.)

Chocolate Swirl:
1 tablespoon maple syrup
1 teaspoon cacao powder
1 teaspoon water

Remember you need to freeze your bananas the night (or at least several hours) in advance to making this recipe, simply peel and cut fresh bananas into chunks, pop inside a ziplock bag or container and leave it inside the freezer overnight.

1. Combine all ingredients for the soft serve in a blender, until the texture is smooth and creamy. Transfer to a serving bowl.

2. For the chocolate sauce, pour the required ingredients into a small bowl and mix well. Swirl over the coconut vanilla soft serve.

3. Devour immediately!
